Super-Easy-Kid-Bread Recipe

Here is the full recipe and I will also save it to my highlights when I get a chance.
Super-Easy-Kid-Bread (or Quarantine Bread)
inspired by the cemitas recipe by @kenjilopezalt on Serious Eats
I made this recipe a few weeks ago exactly as written but soon ran out of certain ingredients and had to substitute. It's been amazing in every iteration. Here is what I made it with today:
2 1/2 cups All-Purpose Flour
3/4 cup Oat Milk
1/3 cup vegetable oil
2 TB ground flax seed mixed with 6 TB cold water, let sit for 5 minutes* or 2 eggs
1 tsp yeast
1 1/2 tsp kosher salt
3 TB honey
* 1 TB ground flax seed mixed with 3 TB cold water = 1 egg
If you are working with little kids make sure your bowl isn't so tall that they can't easily see in. Take a deep breath and know that flour is going to go everywhere. Remind yourself how awesome you are right now and how much your kids will look back on this moment and remember your awesomeness. Put all the dry ingredients in the bowl, mix together. Add wet ingredients and let your little person/people have at it with the spoon. See video for demonstration. They will mix a little, taste a little, get distracted ... you will have to finish mixing. That's cool, you got this! Once mixed, cover with a towel and let sit for 4 hours. Decide whether you want to make rolls or a loaf. At 4 hours, gather your kidlets together and liberally flour your counter to make rolls. Make sure your hands are covered with flour (this is STICKY) and gently make balls. The kids will mush it up and smear it around, just scrape it off their hands and make another ball. Put on a cookie sheet with parchment paper and let rise an hour, covered with a kitchen towel. Bake for 20-25 minutes in an oven pre-heated to 350 degrees. Rolls are done when they sound hollow when you tap the bottoms. Enjoy!

Madangsui

Arrived NYC yesterday and just "happened" to end up in K-town ... A quick text to my brother in law and we were directed to Madangsui whose menu proudly states they are the "Raw Meat Specialists". It was delicious! It is so nice to be back in NY and I am planning a splurge at Absolute Bagels too!

Getting back in the game


I've been absent from my blog lately - maybe it's the usual suspects: summer-time activities, loads of excitement at work and just the way life can be overwhelming at times.  Or, more likely losing the usb cord for my camera to talk to my computer and the irritation of having to post via my Blackberry.  In any case, I thought I'd try a "soft start" and quietly share my love of sorbet ... this sorbet in particular.  The Ciao Bella passion fruit sorbet has eclipsed any other sorbet I've ever had the pleasure to lock lips with.  You should run out and try it right away.  And if you still feel like you need a little something, you can chase it with a scant handful of 70% Ghiradelli chocolate chips.  But I'd suggest waiting until your tongue warms up a bit.
