Celebrating my Big Sister!


Happy Birthday dear Megan!!  Wow.  We've spent 30 odd years together and I love you more each year and what's more, I like you better and better the older we get!  Why is that?  I'm so happy you were born, I'm lucky that you're my big sister (who else would have showed me the ropes on the swing set, or told me scary stories so we could have the shivers together, or joined forces to dupe Mom and Dad back in the day).  In honor of your special day, my Daily Recipe will be your favorite breakfast treat, the Classic,

Oeufs a la Megan or, The Daddy Egger Open Faced Breakfast Sandwich
Go downstairs before Mom and Dad are awake (not sure why this was so cool, but it seemed important at the time).  Do not offer to make eggs for little sister.  Make sure she is very hungry so she will drool over your breakfast as you read your book nonchalantly, pretending she is not hanging over you like a famished puppy as you make it look sooooo good.

2 Eggs and a TB of milk or 3 Eggs, straight-up. Depends on how hungry you are
butter for cooking eggs in

sharp cheddar cheese (not optional!)
mayonnaise
ketchup 
Crazy Salt (either Crazy Jane brand or preferably McCormicks' version, Salt-n-Spice I think it is called?)
2 slices of really good bread, MUST be toasted!

While bread is toasting and frying pan is heating (throw in a lump of butter), crack eggs into a bowl with milk if using.  Whisk lightly using a fork, do not over blend.  Look for a uniform yellow color.  Ignore little sister.  
Wait until pan is really hot.  Pour eggs in pan and DO NOT TOUCH!  Look to see if edges are cooked, flip once, turning off heat immediately.  Egg will cook perfectly as pan cools and won't burn!
When toast is just right (as I remember, you liked your toast well-done), add a thin layer of mayonnaise.  These are open faced breakfast sandwiches, People.   Cut thin slices of sharp cheddar, so thin that perhaps the hot egg might melt them a little.  So good!  Top with eggs and apply ketchup LIBERALLY.  Keeping ketchup on table for further application if necessary.  Sprinkle crazy salt on top like flurries on a spring day, gracing the petals of crocus and snowdrops.  Eat with a side of hot pickles.  If you are little you can drink cran-apple juice or chocolate milk, and if you are 36 years old, like Megan, then you can drink black coffee.  Enjoy!
